Darren’s culinary journey began with a Professional Chef Course, where he developed a strong foundation in classical techniques and kitchen management. He went on to secure his European Diploma after a 6-month course cooking in France. His passion for cooking led him to gain hands-on experience in renowned establishments, from the rustic kitchens of The Compasses Inn to leading roles at The Bell Inn, a family-run business where he honed his leadership and mentoring skills. With years of experience in fine dining, private catering, and large-scale events, Darren has cultivated an exceptional ability to craft menus that celebrate local ingredients and elevate traditional flavours.
Driven by an unwavering dedication to quality and innovation, Darren and partner Gemma have founded their bespoke private dining service to bring restaurant-quality experiences into intimate and exclusive settings. Their deep understanding of seasonal Kentish produce, combined with a wealth of knowledge from his time working in high-end restaurants and catering firms, allow them to create unique, personalised menus that delight and impress.
